S'mores Pie

I saw this on Life as a Lofthouse. This is my new favorite dessert. I have been making chocolate chip pie a few times a month because I love that recipe, but this was so good too so now I will alternate. This one is a MUST try!


S'mores Pie
slightly adapted from: Cookies and Cups

1/2 cup salted butter
3/4 cup white sugar
1 large egg
1 teaspoon vanilla
1 cup all purpose flour
1 cup graham cracker crumbs
1 teaspoon baking powder
1 (7 ounce) jar Marshmallow Creme (don't use regular marshmallows)
4 Regular sized Hersheys Bars, broken into pieces
wax or parchment paper

 DIRECTIONS: Preheat oven to 350 degrees. Spray a *9 inch glass pie pan with baking spray. Beat butter and sugar together until fluffy and combined. Add egg and vanilla until incorporated. On low speed add in flour, graham cracker crumbs and baking powder. Divide the dough in half. Press half of the dough in the bottom and sides of the prepared pie pan. Evenly spread the Marshmallow Creme over the bottom of crust. Spread the broken chocolate pieces on top of the Marshmallow Creme. Form the remaining dough into a ball and place it on a piece of wax or parchment paper. Top with another piece of wax or parchment paper and flatten into a 9 inch circle with a rolling pin. Carefully peel off the top piece of wax paper. Flip the crust onto the top of pie and peel off the other piece of paper. Pinch the dough together to form the crust. Bake for 20 minutes or until lightly browned. Cool completely and then slice and serve.

*The first time I made this I used a pie tin, the second time I made it I put it in an 8X11 inch pan.

Dutch Oven Apple Dumplings

I got this recipe from The Pioneer Woman Cooks recipe blog. If you click her link you will see a whole bunch of pictures.I made one batch in the dutch oven and one in the oven. Both were delightful, however, the dutch oven batch turned out much better. I can't wait to make these again. They were so good! And seriously take a few minutes to put together. My friend made them and told me about them probably over a year ago and raved about how good they were. I finally decided to try them and I'm glad I did.

Ingredients
2 whole Granny Smith Apples
2 cans (8 Oz. Cans) Crescent Rolls
2 sticks Butter
1-1/2 cup Sugar
1 teaspoon Vanilla
Cinnamon, To Taste
1 can (12 Oz.) Mountain Dew Soda
Preparation Instructions
Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan.

Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top. We probably cooked it for about 40 minutes in the dutch oven also.

Cake Batter Truffles

I saw this recipe HERE. Then a short time later my niece made them for her little boys birthday party and I made myself sick eating them. They were so good. So I decided to try them for Karson's little Preschool graduation program. I should know that anything that involves dipping isn't my thing. They weren't terribly hard, but they were much more time consuming than I like. And, I think they looked pretty sad. They did taste good though.


Cake Batter Truffles
by The Girl Who Ate Everything

1 ½ cups flour
1 cup yellow cake mix
½ cup unsalted butter, softened
½ cup white sugar
1 teaspoon vanilla
1/8 teaspoon salt
3-4 Tablespoons milk
2 Tablespoons sprinkles

Truffle Coating:
16 ounces (8 squares) almond bark (or white candy melts)
4 Tablespoons yellow cake mix
sprinkles

Beat together butter and sugar using an electric mixer until combined. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 3 Tablespoons of milk or more if needed to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.

While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Once melted, quickly stir in cake mix until incorporated completely. Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles. Repeat with remaining balls until finished.

Chill cake batter truffles in the refrigerator until serving. Makes around 24-30 truffles.

Chocolate Chip Cookie Pie

Once again, I saw this and I just HAD to make it. I got it from HERE, Life as a Lofthouse blog. I may have just made the same dessert, two times in one week...However, I did have people over both times, but still. It was so fabulous, warm from the oven. And it seriously takes like 3 minutes to put together. So so easy and has my mouth watering just thinking about it again. This is so my kind of pie. Yummy, you must try this.
Chocolate Chip Cookie Pie
Recipe By: Nestle

1 unbaked, 9 inch pie crust (just a frozen one)
2 large eggs
1/2 cup flour
1/2 cup white granulated sugar
1/2 cup packed brown sugar
3/4 cup real butter, softened
1 cup semi-sweet chocolate chips (I use milk chocolate because that is what I prefer)

Directions: Preheat oven to 325 degrees. Beat eggs in a large bowl and beat on high speed until their foamy. ( about 1 minute) Beat in flour, and both sugars. Beat in butter, and then stir in chocolate chips. Carefully spoon into the unbaked pie crust. Bake for 55 minutes. (check for doneness by inserting a knife halfway between center and edge and it comes out clean) Let cool atleast 30 minutes to an hour before slicing! Serve with whipped cream or ice cream, chocolate and caramel.

Twix Ice Cream Cake

Another recipe from HERE! I don't eat ice cream much, hardly ever. It actually makes me incredibly sick. But, this was very tempting. I'm not very good with temptation. I kept looking at her blog thinking how delightful this looked and kept trying to talk myself out of it. I finally decided I'd make it and just eat a small portion...This picture was taken before it was frozen.
TWIX ICE CREAM CAKE
Recipe By: Holly Lofthouse

1 (1.5 quart) Vanilla Ice cream, slightly softened
1 (16 oz) jar of Caramel Sauce
1 cup milk chocolate chips
1/2 cup butter, softened
2 tablespoons sugar
1/4 cup brown sugar
1 cup flour
1/2 teaspoon vanilla extract

Directions: In a 9x13 glass dish spread out the ice cream evenly. Cover and place in freezer. Freeze to set for 2 hours.
While the ice cream is setting start making the cookie topping. Preheat oven to 350 degrees. Cream butter and sugars in a medium bowl. Stir in vanilla and flour until well mixed. Spread dough into a foil-lined 8x8 baking dish. Bake for 15 minutes or slightly golden. Remove from heat and let stand until completely cooled.
Once Ice cream is all set and cookie topping is completely cooled, take ice cream out of freezer. Pour the caramel sauce evenly over ice cream. Break apart the cookie topping into big chunks and sprinkle evenly over caramel.
Melt chocolate chips in a microwavable bowl. Heat at 30 second intervals until melted. Stir and then drizzle over the cookie topping. Re-cover and place back into freezer for 6 hours or overnight to completely re-freeze. Slice into squares and serve! : )
***edited to add the next time I make this I won't put the chocolate chips on top. It was hard to cut through once they were frozen. Next time I will just use choclate fudge sauce and pour it over the top each time I dish it out***

Turtle Tassies

Another recipe from The Girl Who Ate Everything blog. Click HERE for a link to her pictures because hers look amazing. My three favorite things are sugar cookies, chocolate and caramel so what could be better than these. Instead of bringing gifts to everyone at work, we all just bring treats through out the month of December. I saw these and wanted to bring them but I wanted to try them first. They are so good! Mine look horrible compared to hers but I could eat the whole pan. I promise you'll love these too.

1 Betty Crocker Sugar Cookie Mix (I only had refrigerated sugar cookie dough so that's what I used. I'm sure it doesn't matter either way)
butter and egg called for on the pouch
3/4 cup semi-sweet chocolate chips (I used milk chocolate instead)
2 (14 ounce) bags caramels, unwrapped (I'm thinking of trying my 6 minute microwavable caramel next time)
1/3 cup whipping cream
1/2 cup chopped pecans (I didn't have pecans but I don't like them anyway so I just left them off)

Preheat oven to 375 degrees.

Make dough according to package directions. Make 36 (1-inch) balls. Press each ball into a the bottom of each mini muffin cup and press up the sides.

Bake 8-9 minutes or until edges just start to brown. Meanwhile in a small saucepan place unwrapped caramels and cream and heat until melted. Reduce heat to low.

Remove pans from oven. Using the back of wooden spoon press down the sides and bottom of each cup to flatten being careful not to make holes. (I accidentally skipped this step, not on purpose, maybe that's why mine look so funny.)

Bake for 2 minutes more. Remove from oven and immediately place 4-5 chocolate chips in each cup. (and oops I missed this too. Man I must have been in a hurry)

Spoon about 1 Tablespoon of caramel into each cup and immediately top with pecans and slightly press them down. Cool for five minutes then remove with narrow spatula or a knife.

Makes 36 turtle tassies.

Cinnamon Crescent Rolls

I love crescent rolls anyway so I came across this recipe and it looked so yummy. Then today we were driving home and Karson asked me if I'd make some cinnamon rolls so I thought we'd try these. Yummy. I might as well just link every thing to her blog because everything looks good to me. We like the same things.

Cinnamon Crescent Rolls

1 package of refrigerated crescent roll dough
Butter
1 1/2 tbsp cinnamon
3/4 cup sugar

Preheat the oven to 375 degrees. Combine the cinnamon and sugar together and mix well. Place the unrolled crescent rolls onto an ungreased cookie sheet. Spread a layer of butter on each triangle; top with cinnamon and sugar mixture. Roll from the bottom of the triangle to the point.

Place in the oven and bake for 8-10 minutes or until golden brown. Remove from the oven and serve while hot. Enjoy.
